“London has a different energy. It's more busy but that brings so much inspiration.” Honey Dijon on becoming a Londoner and coming together with Johnnie Walker for her new track ‘Earthly Delights’.

Honey Dijon has officially become a Londoner. Spending the last years in the cultural hub of techno also known as Berlin, Honey made the decision to pursue a bigger city life by recently putting all of her archives together in London. “I really want to build and finish my creative studio here. I finally have all of my archives in one place.” As she explores the vibrancy of the city, Honey Dijon also explored a new creative facet in her brand new project with alcohol brand Johnnie Walker.

Utilising PlantWave technology to study the brand new Umami Johnnie Walker Blue Label whiskey, matured in specific oak casks, crafted and blended by the master Dr. Emma Walker, Dijon took each of the ingredients and studied their sensory qualities and sound waves, creating her newest track ‘Earthly Delights’, celebrating a new sensory experience for Johnnie Walker.

Speaking to Perfect, she dives into the special process of creation and experimentaton, also discussing what it means to be a Londoner.

Angel: Honey, tell us a bit more about EARTHLY DELIGHTS, what was the starting point of creating the track?

Honey Dijon: The starting point was tasting this unique liquid and learning all about the blending process from Johnnie Walker’s master blender Dr Emma Walker. She told me how 1 in 25,000 selected oak casks is used to mature the liquid and add a sweet wood spice flavour. From there, it was about conceptualizing something truly unique to take the listener on a journey using the sound of nature through PlantWave technology and connect the sensory of sound to the sensory of taste.


Angel: As an artist, how do you move across inspirations and genres, is your process streamlined or do you get inspiration all around?

Honey Dijon: I have always been this way. I love music, fashion, arts and all cultures. I’m an inquisitive person and that part of my creative process. Over the years of collecting books, and my obsession with magazines I have a huge library of information that continues to inspire me. I’m setting up a creative studio in London and for the first time I have all my archives in one place.

Angel: Collaborating with Johnnie Walker and celebrating their spirit, how did launch night feel to you?

Honey Dijon: It was an incredible night, it was amazing to celebrate with special friends, I was honored that Karen Binns said few words to introduce the song. I was so happy because there was such great energy, especially when the track was played for the first time by friend Suze Ijó. So much has been put into the creation of Elusive Umami as well as Earthly Delights, so it was the perfect way to bring everybody together to celebrate. 

Angel: As a newly established Londoner, would you say there is a difference between Berlin and London?

Honey Dijon: They are two wonderful places. I loved my time in Berlin, The club culture there is so strong it reverberates through the city. London has a different energy. It's more busy but that brings so much inspiration with all the street style and the night life. I’m a city girl. 

Angel: What are you looking forward to for the rest of the year, both professionally and personally?

Honey Dijon: It’s been an incredible year, I’m just about to take a little time off in New York before starting my US tour. I’m looking forward to getting back. After that, I'm concentrated on my next album, which we will be working on a little in NY too.
